KOVAKAAI / IVY GUARD RICE

Ingredients:

Cooked rice            -    1 cup

pepper powder        -  2 spoons
Coriander powder   -   2 spoons
Garam masala          -  1/2 spoon
Turmeric powder      -   1/2 spoon
Green chilly               -  2
Salt                           -  to taste.
Lemon juice              -   1 spoon

For Sprinkling:

Cloves                     -   2
Bay leaves               -   1
Oil                           -   7 spoons
Mustard seeds         -   1 spoon
Curry leaves            -    6 or 7.
Cumin seeds            -    1 spoon.

Procedure:

Cut kovakaai into length wise or round shape.
In a pan add oil and other sprinkling items one by one.
In the same pan add kovakaai pieces and fry it deeply.
Add pepper powder,coriander powder,garam masala,turmeric powder,green chilly and salt.
When kovakkaai is shrinked then add cooked rice.    add lemon juice.
Mix it well .garnish it with coriander leaves and roasted cashews.






MANGO LASSI.

Ingredients:

Mango           -    1 medium size
Yogurt/ curd  -     1 cup

Water            -      1 cup

Procedure:

Cut the mango and remove the skin.
grind it in mixie with curd and sugar.
Add required water  and refrigerate it  for 20 minutes.

SNAKE GUARD CHAPS

Ingredients:

Snake guard / pudalangai  -  1 medium size
roasted gram dal               -  1 cup (small)
Green chilly                      -   3
Fennel seeds                     -    1 spoonSmall onion                       -   7
Oil                                    -    1 cup
Coriander leaves               -    for garnishing
Salt                                   -   as per taste.

Procedure:

Grind green chilly,small onions,fennel seeds and coriander leaves. and transfer it into a bowl.
Grind roasted gram dal separately.
Cut the snake guard into very small pieces and add salt with little water and mix it.
Keep it aside for 5 minutes. then dry the excess water from snake guard.
Add grinded items with snake guard. mix it into ball consistency.
In a pan add oil and deep fry the mixed items into small balls.
Tasty and crunchy chaps ready to eat.


PARUPPU PAAYASAM

Ingredients:

Moong dal    -     1 cup
Rice              -     1/4 cup
Sugar            -      2 1/2 or 3 cups
Ghee             -     6 spoons
Cashew         -     10
Dry grapes     -     8
Water            -     2 1/2 cups.
Milk               -     1 1/2 cups

Procedure:

In a cooker add 2 spoons of ghee,rice and moong dal .
Roast it until aroma comes out and broke it in mixie.
In the same pan add 2 spoons of ghee and add cashews and grapes.
Change it into another bowl.
In pressure cooker add remaining ghee , rice, moong dal and water.
Cook it for 2 whistles.
Add boiled milk and sugar and allow it to cook for anther 2 minutes in simmer mode.
Garnish it with cashew and dry grapes.

VEGETABLE CUTLET

Ingredients:

Potato's                 -      3 no's
Carrot,beans,peas  -      1 cup(chopped)
All purpose flour     -      1/2 cup
Bread crumbs         -      1 cup
Ginger garlic paste  -      1 spoon
Chilly powder          -     1 spoon
Coriander powder   -     1 spoon
Coriander leaves     -      for decoration
Cumin seeds            -     1 spoon
Salt                         -      1 spoon
Oil                          -      1 cup

Procedure:

Boil potato's and vegetable mixer individually.
Drain the remaining water completely from the vegetables.
Mix the vegetables with mashed potato's.
Add chilly powder,coriander powder,and coriander leaves with salt.
In a pan add oil and cumin seeds allow it to sprinkle.
Mix it with vegetable mixer.
Make thin batter with all purpose flour.
Make a small ball and shape it as per your wish and dip it in maida batter quickly and roll it in bread crumbs.
Deep fry it in oil.

SPRING ONION / VENGAYATHAAL KOOTU

Ingredients:

spring onion           -     1 bunch
Channa dal            -      1 cup (75 gms)
Cumin seeds          -      1 spoon
Garlic                     -      7 cloves
Small onions           -      5 nos
Tomato                  -       1 small
Coconut                 -       1/4 cup (shereded)

Procedure:

Pressure cook channa dal for 3 whistles.
Cut spring onions into small pieces
In a pan add 3 spoons of oil and add cumin seeds,garlic pieces, small onion pieces and tomato's.
Fry it until it turns to golden brown colour.
Add spring onions with it and fry it until it shrinks.
Grind the coconut with a spoon of cumin seeds with little water.
Mash the cooked channa dal and add it to the frying pan.
Add the coconut mix with it.Add little water if you needed
Very tasty kootu recipe .. serve it with rice.

Fried idly

Ingredients:

Idly                 -         3 no's
Chilly powder  -        1 spoons
Salt                  -        1/4 spoon
Oil                   -        1 cup

Procedure:

Cut the left over idly's into small pieces.
Add chilly powder and salt with idly pieces with a table spoon of oil.
Fry it in oil.
nice evening time snake item.
