RIDGE GOURD / PEERKANGAI BAJJI

Ingredients:

Ridge gourd         -   1
Gram flour           -   1 cup
Rice flour             -   3 spoons
Chilly powder      -  1 spoon
Salt                     -   taste
Asafotida            -   1 pinch.
Turmeric powder -  1 pinch
Oil                       -  1 cup

Procedure:

In a mixing bowl add gram flour,rice flour,chilly powder and salt with little  water.
Make this as a smooth batter.
Heat oil for deep frying.
Peal off skins of ridge gourd and cut it length wise or round shape into thin pieces.
Dip this ridge gourd in batter and deep fry and toss it other side too.
Tasty bajji ready.

PLANTAIN STEM / VAZHA THANDU PORIYAL


Ingredients:

Plantain stem     -     palm size.
Coconut grating -     2 spoons
Moong dal / 
pasi paruppu     -      2 spoons
Butter milk        -      1/4 cup
Salt                   -      to taste.
Turmeric powder-    1 pinch.
For seasoning:
Oil                     -      2 spoons
Mustard seeds   -      1 spoon
Curry leaves      -       1 arc
Dried red chilly  -       2

Procedure:

Remove the outer skin of plantain stem and cut it into round shape pieces.
Remove the thread like fibre with your index finger.
Finely chop it and keep it in diluted butter milk to avoid discolouration.
half cook moong dal / pasi paruppu and keep it aside.
In a pan add seasoning  items then add chopped plantain and salt.
Drizzle water and allow it to cook.
Then add coconut gratings and serve it with rice.



BOMBAY BREAD TOAST

Ingredients:

Bread                 -        2 pieces
Egg                    -        1
Milk                   -        1/2 cup
Sugar                 -         3 spoon
Ghee                  -         1 spoon

Procedure:

Beat the egg in a wide bowl.
Add milk,sugar in the same bowl and mix well.
Dip the bread in that bowl and place it in tawa.
Allow it to cook both sides with little ghee.
Tasty snake for kids.
If you want cut it into different shapes.

VEGETABLE BURGER

Ingredients:

burger bun     -    1
Potato           -    2
Onion            -    1
Tomato         -     1
Carrot           -     1
Beans            -     3
Chilly powder -    1/2 spoon
Garam masala -    1/2 spoon
Salt                 -    taste.
Cheese            -   1 slice
Bread crumbs  -   1/2 cup
Maida /
Allpurposeflour-   4 spoons
Oil                   -   1 cup
Sesame seeds  -    1/2 spoons

Procedure:

Boil all vegetables together with salt.
Mash boiled potatoes add finely chopped boiled vegetables and fried onions.
Add salt,chilly powder,garam masala.
Dissolve maida with 1/2 cup of water.
Make small balls . like chappathi dough size.
Make this ball little flat and dip it in maida batter and roll it in bread crumbs.
Deep fry this in oil.Vegetable patties ready.
Take burger bun and place patties and arrange sliced onion,tomato and cheese.
Close it with another 1/2 bun. and  decorate the top with sesame seeds.

PASTA SOUP

Ingredients:

Pasta                         -    10 pieces
Carrot                       -    1/2
All purpose powder   -   2 spoon
Ghee                         -    1 spoon
Garlic                        -    2 cloves
Salt & pepper            -    1 spoon

Procedure:

In a pan add ghee and add  finely chopped garlic,carrot fry it well.
In the same pan add all purpose flour fry it little and add 2 cups of water.
Boil pasta with salt and drain the excess water and add this pasta to the pan.
Boil it for 5 mins. stir continuously without any lumps.
Add sat and pepper and serve hot.

MOCHAI / LIMA BEAN SUNDAL

Ingredients:

Mochai / lima bean  -  1 cup
Onion                     -   1
Tomato                   -   1
Garam masala         -    1/2 spoon
Chilly powder         -   1 spoon
Salt                        -    taste.
Oil                         -    1 spoon
coriander leaves     -     Garnishing

Procedure:

Heat the pan  , add oil and finely chopped onion and tomato.
Add Rest of the ingredients,add little water,cover the lid and cook it for another 5 mins.
Then add  mochai / lima bean.
Healthy snack recipe for kids.

GREEN PEAS MASALA RICE

Ingredients:

Onion             -     1 medium size
Tomato           -     1
cooked rice     -     1 cup
Green peas      -     1 cup
Green chillies   -     2
Oil                   -    2 spoon
Mustard seeds -    1/2 spoon
Coriander leaves-  garnishing

Procedure:

In a pan add oil,mustard seeds after splutter add onion and tomato.
Add salt ,green chilly and water with turmeric powder cover the lid and cook it for 5 minutes.
Add cooked green peas in that gravy.
Add cooked rice and stir lightly.
Garnish with coriander leaves.

SPICY VEGETABLE RICE

Ingredients:

Cooked rice        - 1 cup
Onion                  - 1
Tomato                - 1
Vegetables            - 1 cup cubed
(Carrots,beans,green peas,potatos)
Whole garam masala - each one
Chilly powder            - 1 spoon
Garam masala powder- 1 spoon
coriander powder       - 1 spoon
Turmeric powder        - 1/2 spoon
Ginger garlic paste       - 1/2 spoon
Salt                             - 1 spoon
Oil                               - 3 spoons
Coriander leaves          - for garnishing.

Procedure:

In a pan add oil , and whole garam masala.
Add chopped onion and tomato.
Add ginger garlic paste,coriander powder,chilly powder,turmeric powder and salt.
Add cubed vegetables.
Add some water and cover with lid.cook for 7 to 8 minutes.
When the gravy consistency comes out add cooked rice and garnish with coriander leaves.

BAJJI MILAGAI PACHADI

Ingredients:

Bajji milagai  -   3
Tamarind       -   small ball
Jaggery        -   1 spoon
Oil            -   2 spoons
Channa dal     -   1 spoon
Mustard seed   -   1 spoon
Curry leaves   -   4 to 5
chilly powder  -   1/2 spoon

Procedure:

Heat the pan then add oil,mustard seed,curryleaves and channa dal.
Then add finely chopped bajji milagai,fry until the skin of chilly is shrinkled.
Add thick tamarind water, chilly powder and jaggery.
Allow it to cook for 5 minutes.
Serve it with curd rice.

STRAWBERRY MILKSHAKE


Ingredients:

Milk  -  1 cup (200 ml)
Straw berry - 4
Sugar       - 3 1/2 spoons

Procedure:

Boil and cool the milk.
Add sugar and washed strawberries in a mixie jar
and grind it smoothly with little water.
Add milk with these paste and shake it well.
Refrigerate it for 20 minutes.
Serve cool.

GONGURA/PULICHA KEERAI CHUTNEY





Ingredients:

Gongura                      -   1 BUNCH
Dry red chilly               - 10
Bengal gram dal           - 3 spoons
Urad dal                      -  2 spoons
Mustard seeds             - 1 spoon
Oil                               - 2 spoons
Salt                              - to taste
Asafotida                     - 1 small piece (rock type)

Procedure:

Wash gongura and dry it with tissue paper without water.
Dry roast the gongura leaves. the leaves  shrunk and the colour of the leaf also changed.then keep it aside to cool it.
in a pan add oil and rest of the ingredients. roast it well.
Cool all those things and then grind it smoothly in mixie with enough water.
Don't add too much of water.
It is very tasty with dosa ,chapathi and curd rice.
We may use it until 1 week if we refrigerate it.


GREEN GRAM SUNDAL


Ingredients:

Green gram    -  1 cup
Coconut       -  3 spoons
Red chilly dry - 2
Salt           - to taste
Oil            - 1 spoon
Mustard seeds  - 1 spoon
Ginger         - 1/2 spoon (shredded)

Procedure:

If your green gram is dried type soak it for 3 hours.(i use fresh green gram)
Pressure cook green gram with salt for 2 whistles.
In a pan add oil , mustard seeds, red chillies,and ginger.
Add cooked green gram after 3 minutes add shredded coconut with it.
Off the flame after 2 minutes.
Tasty and healthy sundal for kids.

GREEN GRAM VADA


Ingredients:

Green gram dal   -   1 cup
Onion                 -   1 medium size
Ginger                 -   1 inch piece
Green chilly         -   2
Rice flour             -   1 tbsp
Oil                       -   1 cup
Salt                      -   to taste

Procedure:

Soak green gram for 4 hours and pressure cook it  for 3 whistles.
Cut onions into small pieces.
Grind ginger,cooked green gram,salt and green chilly.
Add onions and rice flour to the dough.
Make small vadas between your palms.
Heat oil and deep fry green gram vadas.

Note:

You may also use fresh green grams for this vada


BANANA CUSTARD


Ingredients:

vanilla custard powder  -   1 1/2 spoons
Green bananas              -   2
Chocolate bar               -   1
Milk                              -   2 cups

Procedure:

Mix vanilla with little warm water without lumps.
boil milk and add custard mixer to milk.
Stir continuously without lumps and dosa batter consistency comes out.
keep it aside until it comes to room temperature and store it in fridge for 2 hours.
In a serving bowl order cubed banana.
Pour custard on top of banana.
Melt chocolate with little water and make chocolate sauce.
pour it on custard.

VANILLA FRUIT CUSTARD


Ingredients:

Milk                             -   3 cups
Vanilla custard powder -   2 spoons
Variety of fruits             -   1 cup

Procedure:

Boil the milk.
Mix custard powder with 5 spoons of warm water.
Stir it smoothly without any lumps.
Add this custard mixer into milk.
Stir continuously without lumps.Keep stove on medium flame.
When the milk comes to dosa batter consistency off the stove and keep it aside until it comes to room temperature.
keep it in fridge for 2 hours. (not in freezer)
In a serving bowl order fruits then pour chilled custard on the top of it.

Note:

Add fruits to custard only few minutes before serving. don't mix too earlier.

CHOCOLATE RECIPE WITH MARIE BISCUIT

Ingredients:

Marie biscuits      -    15
Coco powder      -     1 spoon
Sugar                   -     4 spoons
Cashews              -     4
Raisins                 -     6
Milk                     -     3 spoons
Milk maid             -   1 spoon(optional)

Procedure:

Powder the marie biscuits.
Add all ingredients to marie biscuits.
Make it as a dough.
Roll the dough in butter sheet as shown in the picture.
Refridgerate the roll for 2 hours.(don't keep it in freezer)
After 2 hours cut it into 1/2 inch pieces.
Don't add water to make dough. add only milk..

RAWA PAKODA


Ingredients:

Rawa / sooji    -    1 cup
Besan flour      -     2 spoon
Rice flour         -    1/2 cup.
Ginger             -     1 inch piece
Onion              -     1 cup  chopped.
Green chilly      -     3
Curry leaves    -      1 arc
Salt                 -     taste
Oil                  -      1 cup

Procedure:

Mix all ingredients except oil.
Add some water and make this as a dough .
Heat  oil pan, deep fry the pakoda's until golden brown comes out .

BEETROOT POORI


My son always refused to take beetroot.so i try this poori. He loves it very much.

Ingredients:

Wheat flour      -    1 cup
Salt                  -    1 spoon
Beetroot           -    3 spoons(grated) or juice 1/4 cup

Procedure.

Mix all ingredients with enough water.
Make this as a dough.
Dust the rolling board with flour and make the small ball into small disk.
Deep fry this poori.






CHALNA

Ingredients:

Whole garam masala  -  each 2
(patta,kirambu,elakkai,bay leaf,star flower)
Coconut gratings    -    3 spoons
Fennal seeds(perunjeeragam)- 1/4 spoon
Onion                    -    1 (small size)
Tomato                  -    1 
Salt                       -    as per taste.
Green chilly            -     2
Oil                         -     3 spoons
Coriander leaves    -     garnishing

Procedure:

In a pan add oil , add chopped onion and tomato.
Fry until it cooked.
In a mixie jar add coconut gratings,fennal(sombu) and grind it with little water.
Grind cooked onion,tomato and other ingredients with little water.
Allow it to cook for another 5 mins.
Finally add coconut and fennal mix .
Garnish with coriander leaves.

VEGETABLE SPRING ROLL

Thanks to my sister , for helping me to do this.And she likes to add sweet in spring roll.She add jaggery in stuffing.

Ingredients:

Maida  /  all purpose flour  -   1 cup
Potato                               -   2
Carrot                               -   1
Green beans                      -   6 no
Green Peas                        -   1/4 cup
Green chilly                        -    2
Onion                                -    1 small
Ginger,garlic paste             -    1/2 tbsp
Salt                                   -    As needed

Procedure:

Pressure cook potato and peas mash it well.
In a pan add 2 tbsp oil,add ginger,garlic paste and fry finely chopped onion,beans,green chilly and carrot.
Add some water and cook it covered, add salt to it.
Mix mashed potato and vegetable together.
In a wide bowl, add salt and maida mix it well with enough water and make it as dough.
Make small balls from the dough and spread it like poori and add 2 tbsp of stuffing in it.
Seal it well .
In a oil pan heat oil and deep fry the spring rolls.
Serve with sauce.
